Spicy Bean Salad

Beans are full of fiber and will make a satisfying salad. Why not try this Spicy Bean Salad and feel full while still fulfilling your dietary needs!

INGREDIENTS:
• 1 (14.5 ounce) can black beans
• 1 (14.5 ounce) can dark red kidney beans
• 1 (15 ounce) can garbanzo beans
• 1 (14.5 ounce) can pinto beans
• 1 (10 ounce) package frozen corn kernels, thawed
• 1 tablespoon vegetable oil
• 1 teaspoon cumin
• 2 tablespoons chili powder
• 1 teaspoon lime juice
• 1 (8 ounce) jar chunky salsa
• 1 pinch dried parsley

DIRECTIONS:
Rinse the beans well, drain and pour into a large bowl.
Add corn. oil, cumin, chili powder, lime juice, and salsa. Sprinkle with parsley, cover, and chill for about 1 hour before serving.

Cucumber Salad

Try a lighter salad during the warmer months…cucumber salad!

INGREDIENTS:
• Cucumbers, thinly sliced
• 1 small white onion, thinly sliced
• 1 cup white vinegar
• 1/2 cup water
• 3/4 cup white sugar
• 1 tablespoon dried dill, or to taste

DIRECTIONS:
Combine cucumbers and onion in a large bowl. Add the vinegar, water and sugar to a saucepan and cook over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and chill at least 30 min.

Summer Holiday Recipe Series – Macaroni and Tuna Salad

Some call it Tuna salad or Macaroni salad, but whatever you call it, everyone will be coming back for more of this summertime staple salad!

Ingredients

8 ounces Elbow macaroni

1 cup Mayonnaise

1/2 cup Diced green pepper

1/4 cup Coarsely chopped green onion

1 teaspoon Salt

1/8 teaspoon Pepper

14 ounces Solid-pack tuna (2 cans) — drained/broken into

1 Hard-cooked egg — chopped

Directions

Cook macaroni as label directs. Drain; rinse with cold water.

In large bowl combine mayonnaise, green pepper, green onion, salt, pepper, tuna, and macaroni; toss to mix well.

Refrigerate, covered, until well chilled – about 4 hours.

Just before serving garnish with a hard-cooked egg.

Summer Holiday Recipe Series – Spaghetti Salad

Your guests will love spaghetti salad to go along with their bbq plate. Add seafood or chicken to this recipe to make this dish a more fulfilling salad.

Ingredients

1 1/2 pounds thin spaghetti

1 onion — chopped

1 cucumber — chopped

1 green or red bell pepper — chopped

2 medium tomatoes — chopped

1 12 oz. bottle Italian salad dressing or Fat Free — (Wish
Bone)

1 jar Salad seasoning — (McCormicik’s)

1 pkg Italian salad dressing mix, dry — (Good Seasons)

Directions

Cook, drain and rinse spaghetti.

Chop all vegetables finely.

Mix together bottled salad dressing, salad seasonings and dry salad dressing mix.

Shake to mix well.

Pour over spaghetti.

Let chill overnight in refrigerator.

Summer Holiday Recipe Series – Potato Salad

Get ready for your holiday bbq’s with a ton of seasonal salads for your guests. Here is the first installment of the summer holiday salads…the potato salad! Potato salad is made in many different ways but Mr Charles, who is “The King” of the potato salad shared his recipe. Here is a tasty version of the Potato Salad!

Mr Charles’ Potato Salad

Ingredients

10 pounds Potatoes

1 cup Celery — finely chopped

8 Eggs — hard-boiled

1 1/2 pints Hellman’s Mayonnaise

1 cup Sweet relish

1/2 cup Yellow mustard

2 cups Onions — finely chopped

Lawry’s seasoned salt to taste

Black pepper to taste

Sugar to taste

Instructions

Boil potatoes whole.

Let cool, then peel and chop into large chunks.

Mix mayonnaise, yellow mustard, salt, pepper, and sugar together.

Add potatoes, along with the rest of the ingredients, and mix well.
