Caesar Salad

The Caesar salad is one of the most recognizable salads in restaurants. Often served with chicken or steamed shrimp, the Caesar salad is great! Originated in Tijuana, Mexico by Caesar Cardini in the 1920s developed this salad because he actually running out of food in his restaurant. Cardini used what he had left in his kitchen – romaine, garlic, croutons, and Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce. He quickly served this salad as finger food to his customers and the salad became an instant hit worldwide. His brother, Alex, decided to add anchovies to the recipe, much to Caesar’s dismay. Whether you like anchovies or not, Saladseekers has found a light Caesar salad that is still tasty and will be a great satisfying salad.

Cinco de Mayo Salads!

Today is Cinco de Mayo and in honor of this day, Saladseekers has a few Mexican bean salads to share at your Cinco de Mayo festivities. Enjoy these tasty and diet friendly ensalada recipes.

BLACK BEAN AND RICE SALAD (VEGAN)

2 cups cooked rice — cooled
1 cup black beans – drained and cooked
1 cup chopped tomatoes
1/2 cup Cheddar cheese, shredded
1 tablespoon fresh parsley — snipped
1/4 cup Low calorie Italian salad dressing
1 tablespoon Fresh lime juice
Lettuce leaves

Combine rice, beans, tomato, cheese (if desired), and parsley in large bowl.

Pour dressing and lime juice over rice mixture.

Toss.

Serve on lettuce leaves.

Quick and Easy Taco Salad

Taco salads are a quick and easy change up to your salads.  But you have to use caution when eating certain taco salads.  Looking at the Taco Bell nutrition menu, the Fiesta Taco Salad is 840 calories.  http://www.tacobell.com/nutrition/information/ Why not make your own taco salad?  It will save calories and much more healthier for you!

Quick and Easy Taco Salad

1 package of ground beef or ground turkey.

1 onion (diced)

1 pepper (diced)

1 tomato

1 package of lettcue

1 package of 2% cheddar cheese

2 tsp of sour cream

1 jar of salsa

- Brown your package of ground beef/turkey along with the diced onions and peppers

- Place the cooked meat on a bed of lettuce

- Add shredded 2% cheddar cheese, tomatoes and sour cream

- Finish with a topping of salsa

- Add a few nacho chips for the taco flavor
